1.     Application

1.     Main Brewing Technology

1.1  Mashing system

-Proportion between water and material: 1:5-1:6

-Boiling: 20 minute after boiling first adding hop; 50 minute after boiling second adding hop and 70 minute after boiling third adding hop. And add sugar according to local taste.

1.2  Fermentation system

1. After mash cooling, it will be pumped to the fermentation tank, and then turn on the refrigerator and set 9-12℃, then after around 6 days fermenting, it will be ok.

2. On the 11^th day, make the pressure to be 0.07Mba and 12^th day, make temperature to be 5℃.

6. Equipment Cleaning

1. For mashing tanks, first cleaning with alkali water and then cleaning with running water. Please clean the tanks every time after using.

2. For fermentation tanks, first cleaning with alkali water for 20 minutes and then running water cleaning for 5 minutes. And then clean it with glycol water for 20 minutes to do sterilization.
